Welcome to the Alumni Cooking Class

Thank you very much for joining us for this exciting event!  Chef Damian Esposito will guide you through making paella and white chocolate raspberry creme brulee.  You will also have the opportunity to take a virtual tour of the Schubert Research Clinic and learn about the great things happening there. The cooking class, along with documents, and the Schubert Research Clinic tour will be available here for an extended period of time.  

Here are a few tips to prepare for the cooking demonstration:

(1) The proteins on the shopping list can be substituted to meet your needs. You may make the dish as recommended or make it vegetarian, use only chicken, or only seafood, it is completely up to you!
(2) Mise en place (everything in its’ place): In the culinary world, it is best practice to have your ingredients pre-measured and cooking tools (mixing bowls, pans, spatula, whisk) easily accessible. Pre-heat your oven to 325⁰.
(3) The video is pre-recorded, so feel free to start and stop as you see fit. You should be able to cook along with Chef Esposito, but there may be moments where you need to pause.
(4) Chef Esposito will begin with making crème brulee and then move to the paella. Please note: the crème brulee will take at least 2 hours to chill.
(5) This meal pairs well with white or light red wines, so start chilling your bottle early!
